Pizza Tortilla Wrap

Pizza Tortilla Wrap

Serves: 4 servings

4 large (burrito-style) low-fat flour tortillas
1/2 lb sweet Italian or turkey sausage, bulk or removed from casing (slit casing lengthwise)
1 medium green bell pepper, chopped
1 medium onion, chopped
1/2 cup sliced mushrooms, optional
2 cloves garlic, minced
1 tsp dried oregano
1/4 cup chopped black olives, optional
8 Tbs canned crushed tomatoes with basil
1 cup shredded low-fat mozzarella

Measure ingredients; spread tortillas with tomatoes; top with sausage mixture and cheese. Older kids can help wrap the sandwiches.

1. Heat tortillas until warm and soft (check package for directions) and cover with foil; set aside. Preheat oven to 400 degrees.

2. Cook sausage in a medium skillet over moderate heat for about 15 minutes, or until cooked through. Remove the sausage to a plate lined with paper towels. Empty the pan of excess grease and return the pan to the stove; reduce heat to low. Add pepper, onion, mushrooms, and garlic; cook until soft (about 5 minutes). Remove the pan from heat; stir in the oregano and the olives, if desired.

3. Spread 2 tablespoons of tomatoes in the center of each tortilla. Divide the sausage mixture and the cheese evenly among the tortillas; roll or tightly wrap the tortillas.

4. Place wraps, seam-side down, in a baking dish; bake for about 5 minutes, until the cheese is melted and fillings are warm through.

PER SERVING (1 wrap): 334 calories, 20 g fat (8 g saturated), 1024 mg sodium, 52 mg cholesterol. A great source of calcium.
