Winner of the Prix Quai du Polar, Antoin Varenne is a rising star in the exciting new wave of French crime fiction. Hard-boiled Pa...ris police lieutenant Richard Guerin thought he knew the depths of human tragedy and perversion during his years investigating suicide cases--not to mention his childhood, raised by his prostitute mother (who left him nothing but her foul-mouthed parrot). But when a slew of cases that are way too bizarre to be straightforward suicides end up on his desk, Guerin begins to suspect that he is up against a nihilistic evil beyond anything he's encountered before.First, there is Alan Musgrave, an American man who bleeds himself to death on stage during a sick S&M show in an underground Paris nightclub. Another runs naked into traffic with arms outstretched and is splattered to pulp by a heavy truck. Yet another hurls himself from a museum balcony to death by impalement on a whale skeleton.Guerin's corrupt police colleagues ridicule his determination to find the connections between these horrifying deaths. Yet he presses on, plunging into the seamy sadomasochistic underbelly of the City of Lights that most never see.Unexpected help comes from a friend of Musgrave's, an eccentric and resourceful rich American named John Nichols who has recently arrived in Paris toting a bow and arrows. The bloody trail leads them to the upper reaches of both the Parisian police force and the American embassy, while Guerin begins to suspect that the ultimate answer may lie somewhere in Nichols's past.In Bed of Nails, Varenne does for Paris what James Ellroy did for vintage Los Angeles: He expertly throws a bright light on a fashionable city's hideous hidden face. From the Hardcover edition. read more

From Nina Simonds, the best-selling authority on Chinese cooking, here is a groundbreaking cookbook based on the Asian philosophy ...of food as health-giving. The 200 delectable recipes she offers not only taste superb but also have specific healing properties according to the accumulated wisdom of traditional Chinese medicine. The emphasis is on what's good for you, not bad for you. It's primarily a question of balance: eating in harmony with the seasons; countering yin, or cooling, foods (spinach, tomatoes, asparagus, lettuce, seafood) with yang, or hot, foods (ginger, garlic, hot peppers, beef) and neutralizers like rice and noodles.Feeling tired? Ms. Simonds offers a spoonful of ginger in her hearty chicken soup. A cold coming on? Try Cantonese-Style Tofu (to sweat out the cold) in Black Bean Sauce (healing to the lungs and digestion). Your immune system needs building up? Wild mushrooms (a cancer deterrent) are tossed with soba noodles (a stress reliever). Concerned about cholesterol and clogged arteries? Instead of giving up all the foods you love, indulge in Yin-Yang Shrimp with Hawthorn Dipping Sauce.Whatever your health concerns may be, you will find the right restorative and satisfying recipes. Babies and toddlers have special needs, as do adolescents, pregnant and menopausal women, the aging--and all of these are addressed with specific recommendations. The wealth of information Nina Simonds offers here derives from her extensive research into the evidence amassed over three thousand years by practitioners of Chinese medicine, and from her interviews with leading experts today in food as medicine, who offer their firsthand testimony. It is all here in this remarkable book. But, above all, it is the range of dishes, from the exotic to the earthy, that will convince you that you can enjoy marvelous food every day--relishing its good taste and knowing it is good for you. From the Hardcover edition. read more

In Search of the Spirit of TurkeyRakı: The Spirit of TurkeyAt the mention of Turkey, many things come to mind. The meeting of Euro...pe and Asia, and of the cold north winds with the warm breezes of the Mediterra-nean; a vast, rugged landscape. To be in this country is to look at the world from the center of world history; a place where cultures, languages and faiths blend, and nothing remains the same for long.Rakı is the traditional drink of this country, and as such, reflects the fundamental aspects of its personality. Though it's as clear as water, it turns white when water is added, and with a little ice, it envelops you in the heady scent of anise. What better evidence that nothing in this country is as it appears? And in the bottle rakı may appear rather innocuous but once you drink it...!Made from distilled grapes and anise, rakı, with its nearly 500 years of history, is the central element in a unique cuisine that has grown up around it. When introduced to a conversation between a group of friends, it deepens the sincerity and friendship, making it as indispensable a lubricant for everyday life today as it has been throughout its history. It is a firsthand witness to all the major turning points of Turkish history. And finally, when trying to understand almost any aspect of Turkey, rakı assumes the role of interpreter, allowing you to understand the subtleties of this country's spirit.Author Erdir Zat edited the "Encyclopedia of Rakı" (in Turkish), published by Overteam Publishing, won first prize in the spirits division of the 17th Interna-tional Gourmet Book Awards. Now, in order to open up the conversation be-tween rakı and the world, Zat has written the first book in English book on drink. Titled "Rakı: The Spirit of Turkey," the book was written as a guide for the English-speaking public, not merely to rakı, but to everyday life and culture in Turkey. The first book in English on the subject, Rakı: The Spirit of Turkey consists of five chapters. The first, "Rakı Culture," sums up the importance of rakı in Tur-key's social and cultural life. The second chapter, "The Origins of Rakı," focuses on what we know of the drink from historic records. "The Meyhane" outlines the characteristic features of the "tavern" tradition, as well as historic laws that governed them and how they affected everyday life. "The Çilingir Sofrası" delves into the world of mezes, the mainstay of a unique cuisine that has taken shape around the hub of rakı. The last chapter, "Rakı as a Spirit," examines the subtleties of production and presentation that sets rakı apart from its peers, as well as rakı's commercial history.Written with the consultancy of Murat Belge, Raşit Çavaş, Bahattin Yücel and Vefa Zat, the book also includes a foreword by Murat Belge. Published by Overteam Press with the support of Yeni Rakı, "Rakı: The Spirit of Turkey" was translated into English by Bob Beer.İnce Kapak:Sayfa Sayısı: 206Baskı Yılı: 2012e-Kitap:Format: Sayfa Sayısı: 111Baskı Yılı: 2012Dili: İngilizceYayınevi: Overteam Yayınları read more
“Someone should write a book about this crazy Industry!”I have heard that exclamation many times over the last 30 years in which I... have been employed as a Chef in the Hospitality Industry. And yes, a few books have been written, but not quite like this one! This is not a cookbook from a Celebrity Chef, but more of an exploration of what its really like to work in the Hospitality Industry, and especially as a Chef. Combine this with traveling and working all over the world as a Chef, Lecturer and Writer and somehow keeping nearly 30 years of diaries to research from! The Hotel and Catering Industry worldwide is full of the same crazy characters that even the best imagination would be hard pressed to dream up! My Diaries are full of them, as well as true drama, humour and travelling that enthralled me over the years. From my College roots in Manchester, England, to the City of London, from the ski slopes of Switzerland and Germany to the Outback of Australia and from the Greek islands to the Thai island of Phuket. I have especially spent over a decade as a Chef in Australia from Sydney to The Great Barrier Reef in Queensland and in Perth, Western Australia where I arrived in 1990, and finally settled in 2002.Food and cookery is also about life and culture, and as a chef working around the World I have learnt more about different peoples and their culture than I ever could have at school and college! And the best is still yet to be because as a cook you NEVER stop learning. Many years ago as an older teenager living in a grim city struggling with massive unemployment rates, I was on the dole and uninspired. I decided to hitch-hike around Europe. Suddenly I got a Taste of the World, just a taste, but enough to inspire me so much, that I felt unstoppable in my quest to become a fully qualified Chef and travel the world. Thirty years later, I may have slowed down a bit, but Im still travelling and still tasting! This first book in a series is as it is titled, just a Taste of the World and probably more of a Travel Book than a cookery lesson. However, the stories are all true and include authentic recipes and a brief cultural profile of each country that I either worked or travelled in. My aim is to mix the essential ingredients of a true Chef-y and Traveller story or cultural experience thrown in the pot with a dash of humour, to hopefully make it a richer experience for you, the reader, who is about to embark on a bit of Chef-Exploring of your own! read more
For two hundred years, a rogues' gallery of chefs, line cooks, and dishwashers have slaved away, largely unseen, to serve the dini...ng public. Their pedigrees reach back to the first restaurants during the reign of France's Louis XVI and extend to the Delmonico brothers in New York, Escoffier in Paris, and, in Fried: Surviving Two Centuries in Restaurants, a renegade cook in Minneapolis walking like a duck with a whole, raw salmon on his head.Author and professional chef Steve Lerach first stepped through the swinging kitchen doors when he was in high school, starting as a dishwasher, and he never left. He introduces us to an old potwasher who did time for bootlegging, a stuttering Irish chef who collected funds for the bomb throwers of the IRA, and a gay Vietnam vet who found a measure of acceptance only in restaurants.Lerach humorously and poignantly interweaves restaurant legend and lore with his own experiences, exposing similarities not only of profession but of the diverse characters who work the back of the house. Though funny and simply fun to read, these tales often end in tragedy, as various actors succumb to their excesses. Lerach serves up glimpses of the hard work, camaraderie, and satisfaction that distinguish careers in what may arguably be called the world's second-oldest profession. read more

With the wit and pace of Anthony Bourdain, Italian chef and anthropologist Leonardo Lucarelli sketches the exhilarating life behin...d the closed doors of restaurants, and the unlikely work ethics of the kitchen.** **In Italy, five-star restaurants and celebrity chefs may seem, on the surface, a part of the landscape. In reality, the restaurant industry is as tough, cutthroat, and unforgiving as anywhere else in the world--sometimes even colluding with the shady world of organized crime. The powerful voice of Leonardo Lucarelli takes us through the underbelly of Italy's restaurant world. Lucarelli is a professional chef who for almost two decades has been roaming Italy opening restaurants, training underpaid, sometimes hopelessly incompetent sous-chefs, courting waitresses, working long hours, riding high on drugs, and cursing a culinary passion he inherited as a teenager from his hippie father. In his debut, Mincemeat: The Education of an Italian Chef, Lucarelli teaches us that even among rogues and misfits, there is a moral code in the kitchen that must, above all else, always be upheld. read more
Henry Schogt met his wife, Corrie, in 1954 in Amsterdam. Each knew the other had grown up in the Netherlands during World War II, ...but for years they barely spoke of their experiences. This was true for many people — the memories were just too painful. Years later, Henry and Corrie began to piece their memories together, to untangle reality from dreams. Their intent was to help others understand what had happened then, and how it influenced and affected not only their lives but those of all who survived. The seven stories in The Curtain reveal how two families — one Jewish, one non-Jewish — fared in the Netherlands during the German occupation in World War II. Each vignette highlights a specific aspect of life; all show how life changed for everyone, and forever.Four stories are based on the author’s memories of his own non-Jewish family: Henry’s friendship with a Jewish teenager; the conflict of personal antipathy with the realization that help must be provided; the Schogt parents’ determination to do the right thing; the difficulties of coping with an aunt with Nazi sympathies. These are stories about the randomness of survival and the elusive nature of memory. For the Jewish family, three stories drawn from the memories of the author’s wife and family demonstrate the bewildering situation of trying to make impossible life-determining decisions when faced with confusing and deceitful decrees. The family must struggle with the luck — or absence thereof — of finding refuge when forced from their homes, and with the perplexing inconsistencies of the collaboration of Dutch authorities and police with the Nazis. The Curtain emphasizes the difference between the options that were open to non-Jews and Jews in the Netherlands. Non-Jews could freely choose whether to actively resist the Germans, collaborate with the Nazis, or just to do nothing, and try to live a normal life in spite of wartime restrictions.Dutch Jews, on the other hand, did not have a choice — whatever they did, whatever decisions they made, they were doomed, and it often seemed, when someone survived, just simple luck. A short introduction about the war years and an appendix with a chronology of decrees, events, and statistics, provide background information for this haunting memoir of those disturbing years during the German Occupation in the Netherlands. read more
Colonial New England was awash in ales, beers, wines, cider and spirits. Everyone from teenage farmworkers to our founding fathers... imbibed heartily and often. Tipples at breakfast, lunch, teatime and dinner were the norm, and low-alcohol hard cider was sometimes even a part of children's lives. This burgeoning cocktail culture reflected the New World's abundance of raw materials: apples, sugar and molasses, wild berries and hops. This plentiful drinking sustained a slew of smoky taverns and inns--watering holes that became vital meeting places and the nexuses of unrest as the Revolution brewed. New England food and drinks writer Corin Hirsch explores the origins and taste of the favorite potations of early Americans and offers some modern-day recipes to revive them today.. read more

For years, food editors and writers have kept CookWise right by their computers. Now that spot they've been holding for BakeWise c...an be filled. With her years of experience from big-pot cooking for 140 teenage boys and her classic French culinary training to her work as a research biochemist at Vanderbilt University School of Medicine, Shirley Corriher manages to put two and two together in unique and exciting ways. She describes useful techniques, such as brushing puff pastry with ice water—not just brushing off the flour—making the puff pastry easier to roll. The result? Higher, lighter, and flakier pastry. And you won't find these recipes anywhere else, not even on the Internet. She can help you make moist cakes; flaky pie crusts; shrink-proof perfect meringues that won't leak but still cut like a dream; big, crisp cream puffs; amazing French pastries; light génoise; and crusty, incredibly flavorful, open-textured French breads, such as baguettes and fougasses.BakeWise does not have just a single source of knowledge; Shirley loves reading the works of chefs and other good cooks and shares their information with you, too. She applies not only her expertise but that of the many artisans she admires, such as famous French pastry chefs Gaston Lenôtre and Chef Roland Mesnier, the White House executive pastry chef for twenty-five years; Bruce Healy, author of Mastering the Art of French Pastry; and Bonnie Wagner, Shirley's daughter-in-law's mother. Shirley also retrieves "lost arts" from experts of the past such as Monroe Boston Strause, the pie master of 1930s America. For one dish, she may give you techniques from three or four different chefs plus her own touch of science—“better baking through chemistry.” She adds facts about the right temperature, the right mixing speed, and the right mixing time for the absolutely most stable egg foam, so you can create a light-as-air génoise every time. read more
